Resumen
This project conducted a food safety assessment of ten establishments located in Bogotá to determine their compliance status with the Good Manufacturing Practices (GMP) established in Resolution 2674 of 2013 of the Ministry of Health and Social Protection. It also recognized the need to analyze why establishments are so frequently unable to meet these requirements and often end up performing preventive or definitive seals, resulting in very high fines that are difficult to pay. These fines force the owners to completely close their businesses, adding themselves, their families, employees, and everyone involved in this activity to the list of unemployed in the country. Methodologically, the assessment used the inspection, surveillance, and sanitary control report focusing on risks for hygienic food and beverage outlets issued by the Bogotá District Health Secretariat, the Public Health Directorate, the Bogotá Mayor's Office, and INVIMA.
