Abstract

In this document, the entire process related to the study of methods and times in the production of healthy bakery products is presented in an orderly and sequential manner. Skinny investment S.A.S. is a recently founded small company that is dedicated to the manufacture of healthy bakery products, its production plant is located in the Toberin neighborhood at Calle 163 a No 19 A - 58, and whose plant consists of industrial equipment such as: rotary ovens and rotary, growth room, packer, mixer, blender, among others and has a plant staff of 16 people in two shifts and 12 administrative. Precisely given the youth of the company, a study of methods and times is necessary which makes it easier for it to face the growth in its sales in a methodical and optimal way in its processes and with this, to be able to manage processes of continuous improvement and improvement of quality. For this reason, this tool called study of methods and times was developed, which seeks to evaluate and better understand the methods currently applied by employees in the most important areas of baking (dosing, mixing, molding, growth, baking, cutting and packaging). ), based on an analysis of their job, and the time needed to perform the different tasks. With the analysis of the job, it will be observed which jobs correctly apply their work methods, and for this the amount of displacements, movements, delays, pauses and delays caused by the operator in his normal work cycle will be taken into account. The time study will allow knowing which tasks have the most significant impact on bread making, depending on the time needed to complete the preparation or standard time. The calculation of the standard time for each task will give a clear idea of ​​which times are productive and which are not. In order to strengthen productive times, to eliminate unproductive times and, in general, to improve the methods currently applied, a proposal will be proposed and designed at the end of the document, which will increase productivity and help avoid unproductive times.
