Resumen
This work presents the current status of the company Soy Panela S.A.S. that is dedicated to the elaboration of food products based on pulverized panela. Through the Vester matrix, used as a tool for the identification and determination of a series of causes and consequences generated from a number of problems; an attempt was made to prioritize these problems and identify the critical points that cause non-compliance in the delivery times of the orders, staff turnover and increased production costs. For this reason, the creation of an operations management plan was proposed, based on a strategic orientation that aims to focus the company on its economic activity, a tactical plan that allows programming the plant's resources, capacities and production. and an operational plan that seeks control in the processes and an adequate management of the capital of the organization, achieving, a control of the productive activities, a documentation of the information, an executable production plan and a support to the scarce training of the personnel.
