Resumen
The confectionery industry in Latin America presents a stagnation of growth due to the lack of innovation, and this project leads to its solution, increasing the sales and participation rates of this industry in the market, which will eventually help the job creation both in this industry and in technology. A 3D chocolate printer of 40cmx40cmx20cm was developed, for which a mechanical structure, an extruder with its respective temperature control was implemented in such a way that the melting of the chocolate at 43 ° C was achieved. What is sought with this project is to help the development of the pastry and baking industry through innovative and personalized 3D designs made with chocolate, which boost the sales of pastry products with unique decorations that have different applications, whether for festivities, to promote a brand, advertise or simply for personal use. The project will be developed in research mode, for the DIGITI research group. The place of execution will be the Faculty of Technology, in a period of three months and with a budget of 10’551,000
