Abstract

This project was conducted with the aim of providing advice in the formulation of the recovery plan for the sale of foods supermarket MERCA FRUVER EXPRESS, in accordance with the provisions of resolution 2674 of 2013, where it tends to ensure public health and quality the service, standardizing procedures to mitigate the risk of food dispensed. In the preliminary diagnosis process, the overall profile of the establishment where 76.7% compliance for manufacturing processes and sanitation, with the results subsequently obtained was evaluated the content of programs of basic sanitation plan which identifies built consecutively; Cleaning and disinfection program MCFEX 001, Program integrated management of solid waste MCFEX 002, Program control pests and vectors MCFEX 003, Program drinking water MCFEX 004, Emergency Management Program MCFEX 005, added to this development the identity cards recommended in handling food employees and continuity with temperature controls in meat and dairy coolers. At the stage of completion results as installing kit and fire extinguisher, plane evacuation route, installation of handwashing protocols and disinfecting utensils besides the tagline in cans for disposal of solid waste are delivered; assessment also held 89.04% where compliance with all the parameters evaluated was obtained.
