Resumen
This work focused on implementing the operational excellence model in the doria food products plant with the goal of reducing rework and waste in the Pastificio process. It began with an analysis of the causes of these losses using a fishbone diagram and the development of an action plan. The project involved creating operational and cleaning standards, along with generating checklists in google forms to ensure compliance. Management and performance indicators were developed for both operators and supervisors, which were presented in data studio. Additionally, the 5s methodology was implemented, and a training flow was designed for machine operators, mapping their knowledge and skills in a skills matrix. As a result of these initiatives, production increased and the proposed targets for waste reduction and rework were successfully met.
