Resumen
The company distributes meat food Vaqueiros JS S.A.S develops its commercial activities in the refrigerator of Guadalupe in the city of Bogotá D.C. Currently, the company's setting-up do not meet more than 50% of the sanitary execution standards set forth in Decree 1500 of 2007, among those that stand out, for example, the lack of a cleaning and disinfection program, pest control or management of solid waste, among others. In addition to the above, it was found that the level of appropriation of good hygienic practices (GHP) and good manufacturing practices (GMP) is relatively low within Vaqueiros JS S.A.S; taking into account the context of the food industry and the implications that in public health can be generated in the absence of assurance of the safety of meat food inside commercial establishments. The main objective of this document was to formulate the Standardized Operational Sanitation Procedures (SOSP) for the facilities of the aforementioned company.
