THE JELLY "LA NIEVE" is a fresh, sweet and high nutritional content product with a name easy to remember for consumers, ultimately, a soft and pleasant dessert, besides its relation to traditional and natural, generates high consumption for easy acquisition because it is sought to meet the needs of an economic and delicious treat. With a niche market focused on individual customers of all ages regardless of gender or occupation, with one thing in common, preference for traditional snack products and easily accessible which fulfill the function of desserts or snacks achieving their liking . As for the development, it is purely traditional with a family recipe that has transcended generations. Creating a design methodology for implementing the system of quality management NTC 6001: 2008 arises from the purpose of generating the theoretical basis for expanding a familiar idea of wanting to launch and grow a pure-blooded product, and thus enter the competitive environment with bases robust. The result of the whole process was positive about the possibility of raising microenterprise about the importance of implementing a comprehensive management system for the sole purpose of generating a positive impetus to the policies that achieve bet certification microenterprise and compete boldly into new markets monopolized by few.
