Resumen
The following is a thesis developed and presented in the form of entrepreneurship based on the design of the sanitation plan for “SOPAS, CARNES Y ALGO MÁS” restaurant, according to Decree 3075 of 1997 and Resolution 2674 of 2013 the Ministry of Health and Social protection, in order to guide the owners and employees of the establishment in the hygienic and APMs each practical work done. In the beginning was developed a health diagnosis by a pre - inspection about the initial conditions of the establishment, processes, work areas and the staff distribution; then a visit of inspection, monitoring and control on-site inspection report through “Acta de Inspección Vigilancia y Control Higiénico sanitaria a restaurantes de la Secretaria Distrital de Salud de Bogotá de la Dirección de Salud Pública”, conducted in the first instance by the Health Authority held and on appeal by the authors of the project, in which a health profile of 67% and 72% respectively, verified compliance according to the minutes respects was obtained. Based on these results, has been made a comparative analysis between the two surveys was conducted to identify areas in which they have more failures, resulting in a difference of 5% in total compliance of each inspection. In the final stage was planned the sanitation plan that consists of programs for cleaning and disinfection, solid waste management, water supply, pest control and hygiene and protection measures, specifying the features and processes that must develop in each work area including checklists in order to comply with current standards and ensuring the quality and safety of the service provided on site.
