Resumen
The municipality of Soacha Cundinamarca, has large commercial areas located in each of the communes, where the commercial activities with the greatest presence are those that involve food handling, in communes 4 and 5 of the municipality around 6 commercial zones were determined, where food expenditure establishments such as Líchigos, shops and cigar stores predominated, followed by food preparations such as bakeries, greengrocers and fast foods. During the development of the internship, visits were made to 125 food preparation establishments and 149 food and beverage dispatch establishments, due to health regulations the operating and documentaryconditions of this type of economic activities are similar and are focused on the safety of the food that is manufactured or distributed there. Through the visits carried out, it was determined that the shortcomings with the greatest incidence in this type of establishments are found in the documentary part, which implies records of daily sheets in addition to good manufacturing practices, focused on the handling of food and the sanitary hygienic aspects of The activities of the personnel, the sanitary conditions that are present in the spending and food preparation establishments in communes 4 and 5 of the municipality of Soacha Cundinamarca are related to social, economic and demographic factors characteristic of each of the areas, in addition to the lack of implementation of national health regulations by business owners.
