Resumen
In this project a diagnosis food handling in eleven establishments in the town Barrios Unidos Simon Bolivar in the sector between 76 and KR CL 65 and CL 75 KR 65 is made to know the status of compliance according to Good Manufacturing Practices (GMP) established by resolution 2674 of 2013 of the Ministry of Health and Social Protection, specifically the title II, chapter VIII which corresponds to restaurants and food establishments. To diagnose the inspection report hygiene control and health monitoring issued by the District Department of Health of Bogotá, Department of Public Health was used.
The overall results of the eleven establishments indicate that the assessed industry fully complies with 68% of current regulations, partially meets 17% and does not meet the 15% of the inspected conditions; where it was found that the most common deficiency was the lack of registration or daily and monthly monitoring in writing of the various health programs.
They advised the owners to develop, put in practical and archiving UN plan full sanitation that has all its programs, cleaning and disinfection, waste solids and liquids, Pest Control and drinking water.
