Resumen
This work analyzes the productive model of traditional sweets made by Palenquera women in San Basilio de Palenque, located in the department of Bolívar, Caribbean region of Colombia. As a contribution to sustainable local development, culinary practices, production processes, marketing and forms of community organization that make up a significant production chain are studied. The research contemplates the historical-cultural analysis of the trade, the characterization of each stage of the production process and the evaluation of its socioeconomic, cultural and tourist impacts. The role of the ASOPRADUSE Association as an organizational reference is highlighted, and a governance strategy is proposed that articulates local knowledge, economic sustainability and heritage recognition.
