The conservation of the cold chain and product safety are increasingly important aspects in the meat products industry due to the continuous increase in understandable demands on the part of consumers. This represents a great challenge at the Guadalupe slaugterhouse's points of sale in Bogotá, Colombia, one of the most important profit centers in the country. Currently, quality assurance of meat products focuses on the exclusive measurement of temperature using sensors integrated into cellars or refrigerators, without having redundant sensors, which exposes them to poor measurements due to lack of precision and not having in-line monitoring. times when you are not at the point of sale. A review was carried out on the processes involved in the value chain of meat products, focusing on the last links and directly on the processes carried out in the refrigerator and at the points of sale. Based on the above, an IoT system with three modules was proposed that allows the capture of information through sensors connected to a WiFi network, analysis of key process variables and visualization of data in real time for decision making.
