Resumen
This internship report as a work requirement of the degree "Standardization of the production process in Don Pepe eu artisan empanadas" arises from the need to improve the operations that are part of its production process, in order to standardize the process through tools that allow to recognize and characterize each of them for an initial diagnosis. In order to standardize the production process is that the study was made to know the causes that derive the main problem is the presence of idle and idle time in the production line. For this purpose, the main operations that lead to the elaboration of each product were established. Once the general process is documented, the basic and main operations of the preparation of a pie are illustrated, the time measurements corresponding to each type of empanada were taken, where standard, normal, average, and supplement times are evaluated, which will allow standardization. In addition to this, the costs of each of the products are determined to determine the cost / production of each one of the patties in batches of 100 units calculated with the fixed and variable costs of the company.
