According to the study by the Catholic University about prospects for industrialization of avocado and also the current situation in trade by ProColombia, an institution belonging ministry of commerce, industry and Colombian tourism, there is a growing market for companies that are incorporating avocado as input for the development of their food given the versatility to enable products based on it, creating solutions to food, cosmetic and medicinal level. (J. A. Olaeta, 2003). The current method of presentation largely limited its ability to be used industrially as an input in manufacturing processes and for this reason large part of the current market for food is still relegated to use in natural state. Avocado is currently exported in its natural state obtaining high costs due to its large volume and technical specifications required for the transport and conservation given the nature of the fruit that can be evidenced in ISO 1248-2 and 1248-3. The demand for avocado industry is a market little explored as the dynamics of export of the country as we see in the ministry of commerce, industry and tourism is focused on the food industry, clearly demonstrating an opportunity to generate value to the product by modernization of production methods providing a more tailored to the needs of today's customer. (Daniela P & Vanessa L. 2010). It seeks the economic feasibility of developing a production and packaging of freeze-dried avocado export it to North American industrial market. Given the intrinsic properties of the dehydrated avocado it is a good alternative for this fruit industry since this presentation gives you the possibility of extending its life preserving its organoleptic and nutritional properties (J.A. Olaeta 2003). It seeks to assess the feasibility of production and marketing as input in the food industry medicinal, cosmetic and medicinal.
