Resumen
This work focused on evaluating the current inventory management model that is implemented in the XYZ Bakery Industry and proposing a management model based on historical data in order to have a better control of the packaging materials, as currently in the different branches that the company has at national level is presenting a high cost of the consumption of these materials without having a justification such as increase in sales; the company has 64 branches nationwide, which are distributed in 58 in the urban perimeter of Bogota and 6 at the national level, although for the development of this work the research was limited in 4 branches, which were chosen for their size , location and sales level. In addition to this problem, it was also identified that the replenishment method used by the branches at present, is based on the expertise of the point of sale managers, without taking into account the factors involved in the management of inventories, this is due to lack of knowledge of tools or methods that could support this activity and result in the optimization of inventory levels and a control in the consumption of these materials.
