Propuesta de una alternativa de mejoramiento tecnológico para el sistema de combustión de un trapiche rural comunitario en la inspección de Mámbita (Cundinamarca)

Abstract

This research proposed alternatives for technological improvement for the stove of the traditional rural production system of panela in a community sugar mill in the province of Mámbita (Cundinamarca). The rural panela production process was characterized through structured interviews with 10 local producers in the region, from the information provided the processes were identified, the stages were analyzed and the system flows were established. With this information, the current state of the stove was verified by means of a qualification matrix that evaluated its structuring components. As a result, the critical variables that affect the process and the components to be improved in the combustion system to make it more efficient were obtained. The suggested changes respond to local needs in terms of design and materials, and do not alter the system of the rural process itself, which prevents it from losing its traditional character.
