From the earliest food hygiene practices of primitive humans to the advancement of the food industry, the development of knowledge disciplines, regulations, and sanitary standards represents the social need to ensure the safety of food and beverages. To assess the sanitary conditions of retail outlets located in the selected neighborhoods of the Gran Yomasa Zonal Planning Unit in the locality of Usme through systematic processes of inspection, surveillance, and risk-based control, the applicable current legal regulatory guidelines and research in bibliographic productions by expert authors were taken into account. Fieldwork in the study area was adopted as an alternative that enabled the systematic collection and organization of information, which was tabulated in Microsoft Excel. It was identified that 163 retail outlets obtained a favorable sanitary concept with requirements due to non-compliance with sanitary requirements such as: deterioration in floors, ceilings, and walls, lack of instruments for temperature measurement, failure to conduct medical examinations or training plans, failure to present the Sanitation Plan or water tank cleaning certificate, lack of containers with lids and bags for the temporary storage of generated waste, failure to maintain daily temperature control logs, storage of packaged products on the floor, and lack of a designated and exclusive site for products with expired dates. It is necessary to promote training and awareness processes to control the physical, biological, and chemical risks presented by the handling of food and beverages in retail outlets.
