Resumen
This study aims to evaluate the feasibility of establishing a company dedicated to the commercialization of fruit-based products in the Gualivá Province, Cundinamarca (Colombia). The initiative addresses the challenges of high post-harvest losses and the underutilization of locally produced fruits. The proposed project focuses on developing a line of healthy products—such as jams, fruit pulps, and dehydrated snacks—sourced directly from small-scale farmers. The objective is to add value to agricultural production, strengthen the rural economy, and reduce food waste. The methodology applied encompasses market analysis, technical and financial evaluation, and comprehensive planning that integrates environmental considerations, quality assurance, safety protocols, and risk management strategies. The findings confirm the economic viability of the proposed enterprise.
