Resumen
Food production is vital in today's society, facing challenges such as climate change, food security and environmental sustainability. In response, unconventional alternatives are being explored to diversify food production and reduce the environmental footprint of agriculture. In this context, ostreatus mushrooms (Pleurotus ostreatus), edible mushrooms with high nutritional value and easy to grow in various agro-industrial substrates, have gained relevance. The cultivation of ostreatus mushrooms in Colombia has grown due to its demand in the national and international market and its potential to generate employment and rural development. However, the limitation in technical knowledge, access to financial and material resources has hindered its production and profitability. The objective of this study is to evaluate the technical, economic and financial viability of ostreatus cultivation in Bogotá, using sugarcane bagasse as a residue. Field research, collection of information on ostreatus production and marketing, evaluation of substrate availability and costs, identification of market actors and financial and risk analysis will be carried out. The aim is to determine the economic viability of orellana production as a profitable option in the agricultural industry. This project is presented as an opportunity to explore a sustainable and profitable alternative in the agricultural industry, taking advantage of the resources available in Bogotá and contributing to the reduction of environmental impact through the use of agro-industrial waste.
