Resumen
In the development of this work, a study was initiated to take the production times of 12 bakery and confectionery references of the Juan Valdez company, with which studies of routes, methods and times would be carried out, which will allow them to continue searching continuous improvement and achieving organizational success translated into achieving its objectives and maximizing its productivity. This research managed to collect the necessary information to carry out the study of times, establish flowcharts that would serve as support to interpret the production processes and flowcharts which show in detail the activities and the exact time they take to be carried out, as well as the distance of each activity. In the course of this investigation, it was possible to identify inefficient methods to achieve the maximization of production, for this reason an online balancing was devised which allowed achieving this objective, which was supported with the design of tools that made it easier some activities.
