Abstract

The main objective of this thesis is to identify operating losses in the cattle processing process of Frigorífico Guadalupe S.A.S., focusing on the eight major losses described in the Lean Manufacturing methodology. Using the IPO diagram (Inputs, Process, Outputs), the second stage of the production process (slaughter) will be analyzed. The purpose of this research is to identify the eight major losses: Defects, Inventories, Overproduction, Transportation, Reprocessing, Waiting, Movements, and Unused Talent. Its focus is on providing a clear diagnosis of operating losses to facilitate decision-making for future improvements.
