Resumen
The demand for Hass Avocado for export markets has generated a increase in planted hectares and in their productivity. This is how the (Ministry of Agriculture and Rural Development, 2018) that based on data from ASOHOFRUCOL, states that between 2014 and 2018 the hectares planted with avocado hass went from 7,416 to 9,700 with a variation in fruit productivity from 46,600 to 63,708 tons. Together, for 2018 Antioquia was the department that led the export of avocado with a 50% share and the country was positioned as the third in the world in hectares harvested from the fruit (Ministry of Agriculture and Rural Development, 2018). In the same sense, (FINAGRO, 2018) details that, for the department of Antioquia, the production of first quality, considered as that in which the fruits meet with specific weight for the export market (weight of more than 100 grams and optimal phytosanitary conditions), represents 60% of the total harvested fruit. In Consequently, the remaining 40% does not comply with the export conditions and is commercialized through the country's traditional channels. For their part, local channels present multiple problems of distribution and conservation of the fruit in accordance with the provisions of the (National Department of Planning, 2014), which leads to losses in market places of 19.8% of the foods that are stored and traded. Given this, various authors have evaluated the feasibility of adding value to Hass Avocado from the transformation of this to obtain one of its by-products. This study evaluates the pre-feasibility of extracting avocado oil for food preparation from the percentage of harvest that is not exported and the viability of its commercialization in Colombia as a healthy oil.
