Fungi (mushrooms) are organisms that perform very important functions within ecosystems, some even serve as food and have degrading and decomposing capacity of organic matter and hydrocarbons. Specifically, the genus Pleurotus Eryngii (Seta Cardo) has these two characteristics which allows it to be used as a decomposer of lignocellulosic agro-industrial waste that is generated as waste in some productive farms in the country. Fungi will be used as a means to produce two purposes: the first, mitigate the environmental impacts of these wastes that are incinerated or disposed of in landfills without any kind of use and second, solve the lack of supply, designing a production unit that allow to produce a nutritious food, at low cost and with high profitable potential in the market. Feasibility studies were carried out that were based on the contextualization of the project, a market analysis for the product in question that would allow guiding a project planning. Likewise, based on the above, an operational, administrative and finally financial study was carried out, where the latter gave the expected profitability in the face of various scenarios evaluated.
