Resumen
This paper sets out which strategies ranging from environmental management to reduce the biological risk associated with the consumption of bovine milk. The first phase of work is aimed at identifying the milk production chain different factors that can interfere with the generation of pathogenic microorganisms that affect product quality. From the identification of polluting factors, the second phase of work where microorganisms that may arise from the processes of the production chain of milk, national and international levels shown unfolds. In the third phase of work identifying critical points it is generated from Hazard Analysis and Critical Control Point -HACCP- its acronym in English, for the development of strategies that show where they can act to reduce microorganisms pathogens present in the milk production chain.
