Verificación del cumplimiento en normatividad sanitaria respecto al plan de saneamiento básico de los establecimientos de interés en salud pública de la línea de alimentos sanos y seguros en la localidad de Barrios Unidos en la UPZ Doce de octubre durante la vigencia 2022

In this degree work, a statistical review was carried out of 241 establishments classified according to their type of intervention, such as restaurants, cevicherías and fast food (196); cafeterias, bakeries and greengrocers (23); retail outlets (14); and alcoholic beverage outlets (8). These establishments were the object of an evaluation of sanitary concepts issued by the Healthy and Safe Food Line, in the zonal planning unit twelve the October of the locality of Barrios Unidos in the city of Bogotá D.C., Colombia, during the year 2022. A contextualization of the health surveillance carried out by the state was made, focusing on basic sanitation related to the establishments of interest, in order to subsequently document the results of the inspections carried out. It was possible to determine that the main findings that led to an unfavorable concept and the application of sanitary measures were deficient cleaning and disinfection processes in areas, equipment and utensils; the presence of pests in the establishments; humidity problems in the infrastructure; and the lack of implementation of an adequate sanitation plan. Opportunities were also identified for improvement in the management of processes in each establishment, covering aspects such as water quality, waste management, pest control, and cleaning and disinfection procedures. A concrete action is proposed to address the problems identified and improve the indicators of these establishments, thus seeking to ensure adequate compliance with sanitary regulations.
