Resumen
This work contains the environmental management plan of the Castiblanco de Mochuelo in the location of Ciudad Bolívar in the city of Bogotá-Colombia, developed through an investigation of environmental aspects evidenced in each of the activities of the preparation of the peasant cheese and double cream. These aspects were identified through the case study methodology, obtaining information from primary sources such as plant documentation, field visits and bibliographic review. An initial diagnosis was made in front of the environmental effects generated by the company followed by an environmental assessment through the Leopold matrix, which framed the envionmental problems for which we proceeded to design programs that help reduce environmental impacts generated by the plant in each of the production processes evaluating environmental aspects such as water, air and ground.
