Resumen
This internship at Las Flores Market is motivated by the need to strengthen and improve health and manufacturing practices, with a special focus on self-regulation management based on new guidelines for completing health inspection reports for food outlets. The internship seeks to contribute to regulatory knowledge and hygiene and health practices to ensure compliance with the inspection, surveillance, and health control visits that are continuously carried out at the aforementioned location, as well as to advance the improvement rating of establishments and reinforce the essential documentary information for compliance with environmental regulations and the improvement of health practices within the market. From a theoretical point of view, the internship will allow for the application and expansion of knowledge acquired in public health and basic sanitation. The updating and alignment of key documents will provide a solid foundation for the implementation of more effective self-regulation processes, based on public health methodologies and disease mitigation.
