With the advancement of technology and the inclusion of new food markets between countries, a variety of food offerings have been generated with many options and features for consumers. This has put a challenge for everyone when choosing which food to buy? Which one to consume? o Which of them are healthy? Many of the foods on the market are ultra-processed and on several occasions the labeling and information of the product is not precise in alerting the consumer about the effects produced by all the components of the product, such as those generated by the frequent non-communicable diseases. That is why it is essential to know what health impacts consuming this food in excess with the set of all the chemical substances integrated in the final product or for a specific case certain food additives can generate. Due to the ease of immediate consumption and the availability of food at different times of the year, canned products have been consumed more and more frequently by all consumers, in recent years among the most consumed canned foods are vegetables and meats. that must be processed and in many cases ultra-processed with different chemical substances such as flavorings, flavorings and preservatives that are contained in the final product that is presented to the consumer.
